Matt and Ruth farmed their idyllic plot in East Sassafras with Matt’s parents, but when a large corporation pulled their interests out of the North West of Tasmania, leaving many local farmers short of a market for their produce, the pair did some research and branched out into growing celeriac, a vegetable often used in fancy restaurants but underutilised in the home kitchen. Elphin Grove is still a family operation; during the late summer the Youngs harvest sweet corn, and it’s all hands on deck for the lambing season in late winter and early spring too.
