Medium boxes this week include baby beetroot leaves from York Town Organics. There’s a reason silverbeet and beetroot both have beet in the name – they’re actually both basically the same plant, one variant being cultivated for the leaves, and the other for the roots. Beetroot leaves can be used basically in the same way as silverbeet, and the baby leaves require almost no prep at all. The flavour is a little more earthy, but equally as delicious – be aware though that the lovely red hue will tend to disappear if you cook the leaves in water, so it’s probably best to fry or steam them if you like the colour!
