Backyard Bounty all-Tasmanian Vegie box: 26th April

This week we’re excited to include fresh, new season walnuts from the lovely Phil and Jane at Coaldale Walnuts in $20, $30 and $40 boxes! Nuts store much better in the shell, but they’re still always at their best at the very beginning of the season, so we recommend getting straight into them; and don’t forget you can add them to your box any or every week for $5.5/500g. We’re also pretty stoked to have the first of the trial crop of celery that Maurice from Dendra Market Gardens planted for us ready this week. These will be a pretty regular inclusion over the next few months, and I’m looking forward to finding lots of interesting ways to cook and eat them as we’ve never really had them in boxes much before due to a lack of local suppliers.

The classic Waldorf salad is made with walnuts, celery and apples dressed with mayonnaise on a bed of crisp lettuce – which would be an easy match with the apples and iceberg lettuce included in this week’s box – but the Granny Smith apples from Lucaston Park this week would also team up quite nicely with the strawberries for a bit of crimble-crumble action. I confess though that I’m quite partial to tart Granny Smiths just as an eater rather than a cooker.

Potato grower John’s offering this week is the Russian Banana – similar to a kipfler, this is a great potato for a range of applications including roasting and boiling. He’ll have quite a few of his less common varieties coming up in the next few weeks which is definitely something to look forward to!
