2 1/2 cups plain flour

3/4 cup brown sugar

3 tsp baking powder

1 tsp ground cinnamon

pinch salt

2 apples, cored and chopped into small chunks (.5mm cubed)

3/4 cup walnuts, chopped

1 cup dairy free milk

1/2 cup canola oil

1 tbsp apple cider vinegar

1 tsp vanilla essence


Preheat oven to 180 degree celsius. Line a muffin tin with liners.

In a large bowl, mix together the flour, sugar, baking powder, cinnamon and salt until well combined. Add the milk, oil and vinegar and mix. Then add the apple and walnut and mix until well dispersed.

Use a large spoon to divide the batter into the muffin tin.

Cook for about 20-25 minutes.
