Pumpkin Scones – I’ve been making these with a method similar to the lemonade scones method. Steam pumpkin well (I use however much comes in the box, Usually about 1/4 pumpkin). Once cooled, mash or put in a food processor with 300ml cream and 1/3 cup caster sugar, process until smooth. Put in a large bowl and add 1 cup of soda water then enough plain flour to make a soft dough. Stamp out scones, place close together in a lined tray. Brush tops with milk and bake in a hot oven until they’re golden brown. This makes A LOT! Plenty to take to work and share 😊!
