Big growers in Tasmania rely on processors like McCains and Simplot along with the major supermarket duopoly to buy the lion’s share of their crops, but the latter often have quite exacting standards about size, shape and cosmetic appearance of their fruit and veg. Hunting down Looking for baby swede for one of the chefs we supply produce for, we were pleased to discover that Premium Fresh Tasmania not only market the swede that are over-size by supermarket specs, but also those that are under-size – and even better, both grades are actually cheaper than the “premium” swede, even though they’re just as good, and rather cute too! We’re quite excited to see how they cook up – boiling or roasting whole when they’re smaller is a bit more practical, which I’m hoping will work just as well as my recent radish cooking experiments…
Backyard Bounty started with Mr BB making preserves from home-grown ingredients – one of our award-winning preserves, grapefruit and ginger marmalade, was created when Deb, who supplied the grapefruit in this week’s $20 boxes, gave us a few large bags of her grapefruit to play with. With 250 boxes heading out a week, Mr BB rarely has time to either make or market the preserves, so to avoid some excess stock of silver-medal-winning plum sauce and apricot chutney going to waste, we’ve included it in this week’s $40 boxes.
