Chilli crab with simple salad

DSCN9483Shred a baby cos lettuce, combine with diced avocado, fresh corn (raw), a thinly sliced spring onion, and a diced tomato. Set aside for serving

Cut crab into appropriate pieces for stir-frying (the following video is very helpful: Finely dice an onion, a few cloves of garlic and a fresh chilli. Combine 3 tbsp oyster sauce with a tbsp lime juice, half a tsbp sesame oil, a tbsp tomato sauce, a tsp sugar and a tbsp light soy, plus a judicious squirt of your favourite chilli sauce.

Stirfry crab in a hot wok with rice bran oil until the colour starts to change, add the diced onion, garlic and chilli. Cook for another minute or two, then add the sauce and continue to toss over heat until the crab meat is cooked.

Put a bib on and enjoy! (The sauce goes equally well with the salad and the crab, by the way!)
