Roughly chop a couple of tomatoes, some zucchini, an onion, and a capsicum or two, along with a few cloves of garlic and a chilli. Roast in a hot oven until it looks something like the picture on the right.
Blend to a rough puree, then stir in some basil leaves.
Cook gnocchi (recipe here) and stir through sauce. Top with cheese, bake until golden brown and serve!
(This recipe would work well with other types of pasta as a bake, and the the combination of vegetables in the sauce isn’t crucial, although it is a good one!!)
